Sashimi

Sashimi is raw fish or other sea creature served with no rice, and the fish is usually more expensive than the fish used for nigiri, maki, and handrolls. The fish is more expensive because it is fresher, but if it is tuna sashimi it is because one is eating the tuna belly. The belly of tuna is softer and seems to melt in your mouth, and there is less of the belly compared to the body of the tuna. Octopus, horse mackerel, scallop, sea urchin, shrimp, squid, yellowtail, and salmon are the most common types of sashimi. No matter what kind of sashimi it is, chances are that it is one of the most expensive items on the menu.
